
My Mom is absolutely amazing.
She is 88. She was diagnosed with Celiac disease two months ago. Since then, she has taken gluten free flour and Betty Crocker to task. She has come up with a wonderful Chocolate Cake that puts the cake mix to absolute shame. My mom's cake should win a blue ribbon at the fair. Not only was it beautiful to look at, but the taste was superb. No kidding, one could not tell the difference. She has come up with three different recipes for bread doughs which taste fantastic. The bread does not taste like pound cake and it does not fall a part after two days.
She is a culinary chemist! She has become a genius with different combinations of baking soda, baking powder and egg whites. She is convinced that the secret to baking gluten free depends on these three ingredients. She spends hours looking at recipes determining how each needs to be converted in order to get the best outcome with gluten free flour. I am convinced that if she were younger, we could become millionaires with her creations. She is tackling a yellow cake next.
I have written many posts about my Mother. Everyday she she amazes me more. The other evening she stated that she felt a little "stiff." Without blinking an eye she stretched her back muscles by leaning over and then placing her palms flat on the floor. She assumed this position for approximately two minutes. Now tell me, can you do that? She cleans her own house in a way that puts me to shame. Yet, I consider myself a super house keeper. She shops, prepares only fresh vegetables, and spends money like a miser.
However, when we are out together she heads straight for the children's department. She will count her pennies in the grocery store, but I literally have to take hold of her and say, "No" in the children's department. After three months of shopping, I do feel that we have decided on the Christmas dresses for 2009 for our little Candy Hearts.
There are no words to describe my love for my Mother. She is my best friend, and advocate. We end everyday with a hug and a kiss. Every evening she whispers in my ear, "You are my favorite little girl, and if I do not wake up in the morning, never forget how much I love you."
The day is going to come when I will have to say goodbye to my Mother in this life. Honestly, I can not imagine my life without her. For the second time in my life, I am going feel completely lost. I can't even stand to think about it. People tell me to get myself prepared. Well, tell me how does one get prepared to say goodbye to their Mother? I have absolutely no idea.
Wendy, I would take pictures of her wonderful creations and post them. But, they are gone before I can get my camera! I need to keep a camera in her kitchen!
